This flour is characterised by its dark greyish colour and ash fragrance. The toasted hazelnut flavour with a slight coffee edge also make it unique. The flour has good protein content and contains an abundance of mineral salts.


Type ‘0’ soft wheat flour, toasted durum semolina.

Turnip tops, fresh pork sausages, shellfish (mussels, clams) and asparagus.
